| The production of our red, white and rosé wines from the Chateau de la Coulerette has risen to new levels of quality with the modifications undertaken recently and outfitting of the cellar.

Keeping our varieties separate throughout their fermentations, our white wines made from a 60/40 blend of Rolle and Ugni Blanc go through a light maceration at first and then pressed lightly to maintain a rich and full mouthfeel upon its final blending.
Our whites, like our rosés, are matured on their fine lees until mid January at which time the separate varieties are blended together.

Our red wines are a blend of 3 varieties, as are our rosés.
Remaining separate during the fermentations, the Grenache, Cinsault and Syrah used begin with a cold maceration, proceed through a long vatting on their skins and then the malo-lactic fermentation before stabilising in concrete tanks.

Prior to their bottling, the new wines are racked as is necessary over the course of their maturation.
Our red wines are usually a blend of 60% Grenache and 20% each of Cinsault and Syrah, while our rosés are 40% each of Grenache and Cinsault and 20% Syrah.
